During strawberry season, we often make strawberry shakes, but a must-try recipe is strawberry jam. We do not use pectin or gelatin in this homemade jam, instead allow it to thicken organically, resulting in a rich and flavorful delicacy that is ideal for topping toast, yoghurt, or as a filling in cookies and pastries. Strawberry jam, with its vibrant red colour and rich flavour, is a tasty and fulfilling treat high in vitamins, antioxidants, and fibre.

Ingredients

2 pounds fresh, hulled strawberries

4 cups white sugar

¼ cup lemon juice

Guidelines

Step 1

Crush strawberries in a large bowl until getting 4 cups of mashed berries.

Step 2

In a heavy saucepan, mix the mashed strawberries, sugar and lemon juice.

Stir over low heat until the sugar dissolves.

Turn the heat up high and bring the mixture to a full boil.

Simmer it until the mixture reaches 220 degrees Fahrenheit (105 degrees Celsius). Stir often.

Step 3

After 10 to 15 minutes, drop a small spoonful of jam onto a frozen dish to check for doneness. Allow it to settle down for 1 to 2 minutes. If the jam gels, it’s ready. Otherwise let it boil if it appears thin and runny.

Step 4

Take sterile jars and put the jam but leave ¼ inch from the top. Cover with lids and screw the rings tightly.

Jar Sterilisation

Take a large pot and fill it half with water. Bring to a boil. Put jars in boiling water using a holder. Pour enough boiling water to cover the jars. Bring to a boil, then cover and process for 10 minutes.

Remove the jars from the the pot and store in a cold, dark spot.
