Strawberry Delight

Enjoy the refreshing strawberry delight with cream cheese, strawberries and crunchy crust of graham crackers. With its flavour and texture, this delectable treat is likely to become favourite of the family. Strawberry Delight is ideal for season events, potlucks or as a sweet treat at any time of the year.

Ingredients

  • 2 (8 ounce) cream cheese
  • 1 pound strawberries (about 16)
  • 8 tablespoons (1 stick) unsalted butter
  • 12 full-size graham crackers (about 6½ ounces) or 1½ cups graham cracker crumbs
  • 2 table spoons granulated sugar
  • ½ tea spoon salt
  • ¾ cup powdered sugar
  • 2 teaspoons vanilla extract
  • 2 cups heavy cream
  • ¼ cup powdered strawberry gelatin dessert mix (about 2 ounces)

Preparations

Put 2 (8-ounce) cream cheese in the bowl of a stand mixer (or a big bowl if using an electric hand mixer). Let to soften at room temperature for about 45 minutes.

Pick one pound of strawberries and thinly slice lengthwise.

Melt 1 stick unsalted butter in a small microwave bowl in 20-second intervals until melted, about 40 seconds in total. (You can melt the butter in a small saucepan over medium heat.) Set aside to cool slightly.

Break 12 whole graham cracker sheets into rough bits and place in a food processor. Add 2 tablespoons of granulated sugar and ¼ tea spoon of salt. Process the crackers until they have the sandy texture.

Mix the melted butter and graham cracker crumbs in a medium basin.

Pour the mixture to an 8×8-inch baking dish. Use the bottom of a measuring cup or your fingers to press the crumbs into a uniform layer, taking care to reach the borders and fill the corners.

Place plenty of strawberries on the crust to create a single, equal layer. Dice the leftover strawberries and store in a sealed jar for garnish. Refrigerate the crust uncovered while you make the filling.

Combine ½ cup powdered sugar, 2 tea spoons vanilla essence, and the remaining ¼ tea spoon salt with the cream cheese. Beat at medium speed until frothy.

Proceedings

In another large bowl, combine 2 cups of heavy cream and the remaining ¼ cup of sugar.

Beat with the whisker at high speed until stiff peaks form. Add half of the whipped cream (approximately 2 cups) to the cream cheese mixture and gently mix in with a spatula. Cover and chill the remaining whipped cream until needed.

Spread remaining half of the cream cheese mixture (approximately 2 cups) into the baking dish and put the strawberries over it.

Mix ¼ cup strawberry gelatin with the remaining cream cheese mixture. Use a spatula, whisk the mixture until well blended and no streaks remain. Spread on the cream cheese mixture evenly.

Pour the remaining whipped cream over the strawberry cream cheese layer and spread evenly. Cover and chill for at least 1 hour, or overnight.

Garnish with sliced strawberries and serve chilled.
